Drag each customer to the appropriate seat according to the services they desire.
After the service has been completed, they will pay you. Don't forget to click the money to get it (you don't want to leave your customers waiting at the cash register).
Cutting hair will also leave a hair pile next to the seat. Drag the broom on the counter to the pile and click on it to sweep it up. Leaving hair lying around all over the floor will affect your customer's mood.
